one of the restaurants i sell to serves General Tso's Sweetbreads (Bistro Bethem, Fredericksburg, VA- great stuff there...)

today for Mom's Day:
farmer's market pork tenderloin stuffed with bacon, garlic, spring onion and apples then smoked/grilled
pimento mac and cheese with roasted red peppers and farmer's market pepper jack
lightly steamed asparagus with lemon dill butter
salad of sugar snap pea, french breakfast radish, spring onion, spearmint and mixed microgreens with a balsamic vinaigrette
deanne's famous mrs baggett's cake strawberry shortcake style.

grew the vast majority of it myself.

W3rd. I was supposed to get a break from the "host the family & cook a meal every fucking holiday" norm, but my sister-in-law (who was supposed to relieve me of my burden for once) decided to get heatstroke at her tennis match on Saturday a.m. & stayed in the hospital for two nights. Therefore, my Mothers' Day consisted of making whole wheat/oat chocolate chip pancakes, tofu ham, and fresh-squeezed grapefruit juice at 6am, cleaning the FSMdamned house from 10am-1pm, & preparing the following throw-together for 4pm service:
salad of baby spinach, French breakfast radish, green bell pepper, grape tomato, baby carrot, celery leaves, & garlic chives
black truffle vinaigrette
butter-slathered 5# hen stuffed with parsley, thyme, & garlic and cast iron roasted over a bed of:
baby turnips
purple carrots
fat-ass spring onions
red fingerling potatoes
rutabaga
garlic cloves
braised mixed pot greens with smoked tempeh & Caribbean red chile
snowflake rolls
whipped honey butter with the tiniest kiss of smoked datil chile
vanilla bean & coconut vegan ice cream

VR I made the Texas Tator Tot Casserole you had posted on DGCR a couple years back the other night, extremely delicious!

Luckily I saved the recipe when I found it.

Texas Tater Tot Casserole

1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
2 cans diced tomatoes w/ gren chiles
3/4 cup frozen corn
1-2 fresh jalapenos, sliced
1/2 yellow bell pepper, diced
1/2 orange bell pepper, diced
1/4 cup fresh cilantro, minced
1/2 large red onion, diced
2 cloves garlic, minced
1 1/2 tsp. soy sauce
2 tsp. cumin
1 tsp. oregano
1/2 tsp. hot sauce (you can add more if you want more heat)
1 Tbsp. chili powder
2 pinches paprika
1 1/2 cups Daiya Vegan Shredded Pepperjack Cheese
2 cups frozen tater tots

Heat oven to 375ºF.

In a large bowl, mix all ingredients except cheese and tots. Put this mix into a casserole dish. Then sprinkle an even layer of cheese over that and then an even layer of tots over that.

Bake uncovered for 30-40 minutes or until your tater tots are a sweet golden brown.

I just realized I've still yet to test the powdered chilis I ordered from biscoe last year. I need to get my shit in gear. =/

The sauces are excellent though, I'm going to need to start buying them whenever possible.

I thought i was putting Poppamies Savuomena to everything sane and some insane stuffs at a good pace but it lasted for months. For the next main meal i'm opening their Coco Mango chili sauce
